Here is a neat recipe that you can get the kids to help with and occupy some of their time… This Classic Ruben's ingredients combine with some unexpected elements like Granny Smith apples in these griddled sandwiches. Prep Time is about 15-Minutes and this recipe serves two, so plan on upping the ingredients if you are feeding all the kids… INGREDIENTS: 2 cups shredded coleslaw mix; 5 tablespoons Thousand Island Dressing, divided; 1 tablespoon white vinegar; 1/4 teaspoon freshly ground black pepper; 1 teaspoon spicy brown mustard; 4 rye or Pumpernickel bread slices; 1 (7-ounce) package shaved roast beef; 1/2 Granny Smith Apple, cored and thinly sliced; 2 (1-ounce) Swiss cheese slices; 2 tablespoons butter, melted; DIRECTIONS: Step 1: Stir together coleslaw mix, 2 tablespoons dressing, vinegar, and black pepper in a medium bowl. Step 2: Stir together spicy brown mustard and remaining 3 tablespoons dressing; spread dressing mixture evenly on 1 side of bread slices. Top each of 2 bread slices evenly with beef, apple slices, and cheese slices. Divide slaw mixture evenly over cheese. Top with remaining bread slices, dressing mixture sides down. Brush both sides of sandwiches evenly with melted butter. Step 3: Cook sandwiches in a large lightly greased nonstick skillet over medium-high heat for 2-minutes on each side or until golden.
