Here is a quick recipe that you can get the kids to help with and occupy some of their time… The Ham gives this soup a punch of flavor and using canned ham and beans keeps this recipe simple and if you also use pre-shredded carrots, it is even quicker to make. This recipe takes about 20-minutes (or less…) and serves three, it is easily doubled to serve more… INGREDIENTS: 1 (16-ounce) can Navy Beans, undrained; 1 (15.8-ounce) can Great Northern Beans, undrained; 1/4 cup chopped onion; 1/2 cup pre-shredded carrot; 1/4 cup butter, melted; 1 (5 ounce) can chunk ham, drained and flaked… DIRECTIONS: Step1: Combine beans in a large saucepan and mash slightly with a potato masher. Stir in 1-cup water and cook over low heat until thoroughly heated. Step 2: Meanwhile, sauté onion and carrot in butter over medium high heat until onion is tender.
