What better way to pass the time than making some delicious treats for you and the kids. This batch is a bit different from the previous recipes, they do not contain added sugar, and they add a visual appeal... The title of this recipe is "Strawberry Cream with Coconut Cream Popsicles," but it should have said "Pitaya and Strawberry Cream with Coconut Popsicles," but that is too many letters for the Title Bar, so do not be surprised to find Pitaya included in the recipe, it's not a mistake... This recipe is actually two recipes in one or you can make it with just one flavor (Oh how boring...), so make both recipes and combine them for a real taste sensation with a striking visual appeal (flashes of Red and White...). Prep Time is about 4-hours, 30-minutes; 30-minutes actually doing something and 4-hours just waiting for these delicious Popsicles to freeze... One recipe make 6-Popsicles, but both recipes combined makes 12, so make sure you have enough molds... INGREDIENTS For the COCONUT CREAM: 1 cup canned coconut milk or cream; 1/2 cup coconut Greek yogurt; 2 Tablespoons honey; and 2 scoops Vital Proteins Collagen Peptides...INGREDIENTS For the PITAYA and STRAWBERRY CREAM: 1 frozen pitaya packet; 1 cup frozen or fresh hulled strawberries; 1/4 to 1/2 cup apple juice; and 1 to 2 tablespoons honey...
